Ingredients:
1 pack Shin Ramen (no substitutions)
1 slice American cheese
½ cup red cabbage, thinly sliced
½ cup broccoli florets, cut into planks for more surface area
¼ cup red onion, thinly sliced
½ cup cooked pinto beans (Rancho Gordo if you got ‘em)
1 egg
2 cups water
Essentials: sesame oil, chili crisp, scallions
Instructions:
Start the Pot
In a saucepan, bring 2 cups of water to a boil. Add broccoli, red cabbage and red onion and cook 2 minute.
Add Ramen + Beans
Drop in the seasoning packets, and the pinto beans. Stir gently and add the noodles. Stir with chopsticks to get noodles submerged and boil for 4 minutes.
Swirl the Egg
Beat the egg in a small bowl. Take out a large Ramen bowl and pour the egg into the bottom of it.
Cheese Melt Time
Turn off the heat. Lay the slice of American cheese over the top and let it melt for 30 seconds before stirring it into the broth.
Serve It Up
