Fresh, bold, and built for real life — the Seoul Power Bowl is all about layering juicy Korean chicken, roasted veggies, and spicy gochujang drizzle into the kind of meal that feels as good as it tastes.

Ingredients:

For the Base:
  • 1 cup cooked farro
  • 2–3 tablespoons lemon vinaigrette
For the Protein & Veg:
  • Grilled Korean chicken thighs (sliced)
  • 1 cup roasted diced sweet potatoes
  • ½ cup roasted Vidalia onions
  • ½ cup Purple Rain slaw (or your favorite slaw)
For the Power-Ups:
  • ½ avocado, sliced
  • ¼ cup quick Asian pickles (cucumber, vinegar, sesame)
  • 2 tablespoons toasted almonds
  • Gochujang mayo drizzle (see below)
Gochujang Mayo Drizzle:
  • 2 tablespoons mayo
  • 1 teaspoon gochujang (Korean chili paste)
  • 1 teaspoon lemon juice or rice vinegar
    • (Mix together until smooth)
Optional finishing:
  • Sprinkle of sesame seeds
  • Extra pickled jalapeños for heat
  • Sliced scallions if you're feeling fancy

Instructions:

  1. Scoop the farro onto the bottom of your bowl or plate.
  1. Spoon lemon vinaigrette evenly over the farro to flavor it right from the start.
  1. Layer the toppings:
      • Fan the sliced Korean chicken across one side.
      • Tuck roasted sweet potatoes and roasted onions into their own little zones.
      • Add a scoop of Purple Rain slaw for a fresh crunch.
